Pineapple Habanero Chicken

Serves: 4-6

This is the main event, and Reàl can play a supporting role or be the star of several savory creations.

Ingredients

  • 1 cup Piña Reàl
  • 1 fresh habanero pepper
  • 1/2 cup apple cider vinegar
  • 1 teaspoon salt
  • Juice of 1 lime
  • 1 cup Piña Reàl
  • 3-5 chicken wings per person
  • Chopped peanuts, for garnish
  • Chopped scallions, for garnish
  • Chopped cilantro, for garnish

Directions

  1. Cut habanero in half and add both halves to a saucepot with vinegar and salt. Bring to a boil and cook to reduce by half.
  2. Let cool in refrigerator completely.
  3. Stir in lime juice and Piña Reàl.
  4. Grill the chicken wings. Serve topped with sauce and chopped peanuts, scallions and cilantro.
  5. Or grill or sauté a chicken breast and serve with sauce and garnishes over rice.
