Charred Pineapple Salsa

Ingredients

  • 0.25 cup Piña Reàl
  • 4 slices fresh pineapple 
  • Juice of 1 lime
  • 2 fresh jalapeño peppers, diced
  • 2 tomatoes, diced 
  • 2 Tablespoons diced red onion
  • 1/2 cup chopped fresh cilantro 
  • 1 teaspoon salt

Directions

  1. Grill pineapple slices for 3 minutes on a hot grill or cast iron pan.
  2. Core and dice pineapple slices, then mix all ingredients together.
  3. Serve with spicy grilled shrimp or coconut shrimp, or sesame-soy salmon or chicken.
